Bacon, Zeeland (Zeeuws spek)

Zeeuws spek, or Zeelandic bacon, is a traditional Dutch specialty from the province of Zeeland made from grilled streaky pork belly.

Materials

  • 1 kg lean streaky bacon
  • 10 gr salt
  • 20 gr marinade mix Verstegen
  • 75 gr Ketjap Manis
  • 1 tsp sambal oelek

Instructions

  • Lean pork belly with low pH value, deboned, discard rind and cartilage,
  • Cut in squares of ± 400 g
  • Add the salt, Ketjap Manis to the marinade mix. Coat the pork belly squares well with the marinade.
  • Soak for 2 * 24 hours in the cooler
  • Grill with the rib side down at 140 ° C until core temperature 80 ° C
  • Cool down till 2-4 ° C
