Zucchini pancakes, Kabak Mücveri

- 2 zucchini (or the cores of the 4 stuffed zucchini recipe on this site)
- 1 carrot
- 1 bunch dill
- 1 bunch parsley
- 1-2 spring onions
- 3 eggs
- 4-5 tablespoons of flour
- ½ sachet of baking powder
- salt, pepper
- sunflower oil for frying
Grate the zucchini and carrot. Catch the juice from the grated zucchini with a tea towel or sieve.
Finely chop the dill, parsley, and spring onions.
Combine the grated vegetables with the chopped herbs and onions, eggs, flour, and baking powder.
Season with salt and pepper.
Stir the mixture together and make a pancake batter.
Make pancakes with this batter and fry them on both sides until brown.
Place the finished pancakes on paper towels to absorb any excess fat.
