Zucchini pancakes, Kabak Mücveri
Mücveri is a popular Turkish dish often served as a side dish or meze (a small dish in Turkish cuisine). It's a pancake-like dish made from grated zucchini mixed with eggs, flour, and various spices before being baked or fried.
Yield: 4 portions
Materials
- 2 zucchini (or the cores of the 4 stuffed zucchini recipe on this site)
- 1 carrot
- 1 bunch dill
- 1 bunch parsley
- 1-2 spring onions
- 3 eggs
- 4-5 tablespoons of flour
- ½ sachet of baking powder
- salt, pepper
- sunflower oil for frying
Instructions
- Grate the zucchini and carrot. Catch the juice from the grated zucchini with a tea towel or sieve.
- Finely chop the dill, parsley, and spring onions.
- Combine the grated vegetables with the chopped herbs and onions, eggs, flour, and baking powder.
- Season with salt and pepper.
- Stir the mixture together and make a pancake batter.
- Make pancakes with this batter and fry them on both sides until brown.
- Place the finished pancakes on paper towels to absorb any excess fat.
