Materials

  • 2 zucchini (or the cores of the 4 stuffed zucchini recipe on this site)
  • 1 carrot
  • 1 bunch dill
  • 1 bunch parsley
  • 1-2 spring onions
  • 3 eggs
  • 4-5 tablespoons of flour
  • ½ sachet of baking powder
  • salt, pepper
  • sunflower oil for frying

Instructions

  • Grate the zucchini and carrot. Catch the juice from the grated zucchini with a tea towel or sieve.
  • Finely chop the dill, parsley, and spring onions.
  • Combine the grated vegetables with the chopped herbs and onions, eggs, flour, and baking powder.
  • Season with salt and pepper.
  • Stir the mixture together and make a pancake batter.
  • Make pancakes with this batter and fry them on both sides until brown.
  • Place the finished pancakes on paper towels to absorb any excess fat.
