
Red cabbage with apples (Rodekool met appel)
Red cabbage with apple is a traditional side dish that combines sweet, sour, and savory. It's usually made by stewing red cabbage with apples, spices like cinnamon and cloves, and sometimes vinegar or other spices, until tender. It's a classic Dutch and German side dish that pairs well with meat dishes.

Method
- Remove the outer leaves of the cabbage and cut with a large knife in four quarters. Remove the thick midribs and cut it further into slices
- Cut the onion into rings
- Peel the apples, remove the core and cut into pieces
- Sauté the onion in a little butter. Add the cabbage, vinegar, sugar and water
- Put the apple pieces together with the red cabbage. Leave on a low heat for 30 to 40 minutes to cook under a cover until the cabbage is soft. Stir regularly.
