Zucchini, stuffed

This delicacy contains everything you need for a healthy and, above all, delicious dinner. The stuffed zucchini are especially delicious with homemade yogurt sauce and Turkish bread.

Ingredients
  

  • 4 medium size zucchini
  • 3 cloves garlic
  • 2 sprigs parsley
  • ½ tbsp ground cumin
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1 tsp curry powder
  • 200 gr ground beef
  • 5 tbsp peanut oil
  • 2 tbsp tomato paste
  • 2 red peppers
  • 250 gr cherry tomatoes
Yogurt sauce
  • 200 gr yogurt
  • 1 clove garlic

Equipment

  • 1 Apple corer

Method
 

  1. Preheat the oven to 200°C (400°F).
  2. Cut the tops off the zucchini and carefully scoop out the insides with an apple corer. Leave the edges about 0.5 cm thick and ensure the base remains intact.

  3. Peel the onion and garlic and finely grind them together with the parsley in a food processor. Then knead this spice mixture into the ground meat along with the cumin, salt, chilli flakes, and half of the curry powder. Fill the zucchini with the seasoned ground meat.
  4. Heat the oil in a frying pan and brown the zucchini on all sides. Then place the zucchini in an oven dish
  5. Add the tomato puree and the remaining curry powder to the same pan in which the zucchini were fried. Add 200 ml of water and mix well. Then pour over the stuffed zucchini.
  6. Slice the red peppers into rings and arrange them in the oven dish along with the cherry tomatoes. Bake in the preheated oven for 25 minutes, or until golden brown and cooked through.
Yogurt Sauce
  1. Peel and grate the garlic. Mix with the yogurt and season with a pinch of salt.
Serving suggestion
  1. Serve the stuffed zucchini with the yogurt sauce.
