Tea Brack

Tea brack — a.k.a. Irish Freckle Bread — is a moist, close-grained, packed-with-fruit breakfast bread.

Ingredients
  

  • 12 oz Dried Fruit (12 oz = 340 gr) Any type will do: Raisins, sultanas, cranberries, prunes, figs and apricots. It doesn't matter if you use a bit more than 12 oz.
  • 8 oz Soft dark brown sugar 8 oz = 226 gr
  • ½ pint Hot tea ½ pint = 236 ml
  • 1 large Egg
  • 10 oz Self raising flour 10 oz = 283 gr
Spices
  • 1 tbs Mixed spice
  • 1 tbs Cinnamon
  • 1 tbs Ground ginger

Equipment

  • 1 Loaf tin 2 lb = 900gr
  • Parchment paper

Method
 

  1. Chop the larger fruits up to around the same size as the small fruits.
  2. Mix dried fruit, sugar, spices in the tea
  3. Leave covered overnight.
  4. Add 1 large egg in the morning
  5. Also add the self raising flour
  6. Carefully mix together until all the ingredients are combined
  7. Pre - heat an oven to 150 ℃ or 130 ℃ in a fan oven.
  8. Pour mixture into a lined 2 lb loaf tin and bake in the oven for 1 and three quarter hours.
  9. When cool enough to handle turn out onto a wire rack.

Notes

A typical 2 lb loaf tin produces approximately 21 slices (1 cm serving)
